Ingredients
- Olive Oil
- 1 small onion, diced
- 1 small red pepper, diced
- 3 tablespoons garlic, chopped
- 2 anchovies, chopped (optional)
- 1 tablespoon chili flakes
- 2 large cans diced tomatoes
- 2 small cans tomato paste
- 1 cup red wine
- 2 teaspoons oregano
- 2 teaspoons Italian seasoning
- 1 cup lightly packed fresh basil
Method
Coat a large sauce pan with olive oil and sauté onion and bell pepper until translucent. Add the garlic, chilies, herbs and anchovies and stir for 3-5 minutes. Then add wine and simmer until the wine is reduced. Add the diced tomatoes and tomato paste and stir well and then simmer for at least a half of an hour, or longer for fuller flavor. Serve over pasta for dinner, or with meatballs for a delicious pupu!
