Ingredients:
- 2 boneless skinless chicken breasts, cut into 1/2 inch pieces
- 1 small onion, diced
- 1 small red pepper, diced
- 1 jalapeno, diced
- 2 tbs chopped garlic
- 1 can of corn
- 1 tbs cumin
- 1 tbs chili powder
- 2 cans of diced tomatoes
- fresh cilantro, chopped
- tortilla chips, crushed
Method:
Place chicken, onions, bell peppers, jalapeƱo and garlic in a large pot. Add olive oil and saute until the chicken is mostly cooked. Add the rest of the seasonings and corn and simmer for one hour. Add crushed tortillas and cilantro and serve in a bowl. This recipe serves 4-6 people.
