Ingredients
- 2 lbs boneless chicken thighs
- 3 tbsp turmeric
- 1 tbsp garlic salt
- 1 tsp black pepper
- 1 tsp ground cinnamon
- 1 tsp chili powder
- pinch of saffron
Method
Rinse and pat dry the chicken. Mix the spices together to create a rub and dust the chicken on both sides. Leave a little extra dusting for later. Heat oil on medium high in a cast iron skillet. Cook the chicken in batches for four minutes per side. Preheat oven to 300 degrees. Then place all of the chicken back in the skillet, cover and bake for twenty minutes. Season with the leftover dry rub. You can either cut into small pieces for an amazing pupu, or serve over rice!
